Ingredients

For the Cake

  • 8 oz cream cheese
  • 2 cups + 2 tablespoons granulated sugar
  • 3 eggs
  • 3 ½ cups sweet rice flour
  • 1 tablespoon baking powder
  • ½ cup butter, melted
  • 1 tablespoon vanilla extract
  • 15 oz cream of coconut
  • 1 cup whole milk
  • 8 oz crushed pineapple
  • ¼ cup brown sugar

Directions

  1. Preheat the oven to 350°F
  2. In a large bowl, cream together 8 oz of cream cheese and 2 cups of granulated sugar.
  3. Once combined, stir in 3 eggs, one at a time.
  4. The add 3 ½ cups sweet rice flour, 1 tablespoon baking powder, ½ cup melted butter, 1 tablespoon vanilla extract, 15 oz of cream of coconut, 1 cup whole milk, and 8 oz of crushed pineapples and stir to combine.
  5. Pour into a greased 9”x13” pan, and sprinkle with ¼ cup of brown sugar and 2 tablespoons of granulated sugar.
  6. Bake in a 350° oven for 1 hour. Allow to cool before serving. Enjoy!
